Ham Roll Ups

My mom was taught this recipe by my grandma, and we have it has become a Christmas tradition. Ham roll ups are one of my most favorite party treats and are great any time of the year.

Ingredients

  • 5 lbs. of sliced ham
  • 1 ½ pounds of sliced Swiss cheese
  • Cornbread stuffing
    • 1 pan of cornbread mix (any recipe)
    • 1 cup of chopped celery
    • 1 cup of butter
    • 1 cup of chopped onion (yellow)
    • ½ cup of apricot preserves
    • ¼ cup of water
    • Apricot sauce
    • 1 cup of water
    • 1 cup of pineapple juice
    • 2 tablespoons of brown sugar
    • 1 tablespoon of butter
    • 1 tablespoon of cornstarch
    • ¼ cup of apricot preserves

Directions

  1. Follow your cornbread mix’s directions. Once the cornbread is done, let it cool. Then preheat the oven to 350° F.
  2. Cook celery, onion, and butter in a frying pan until soft then add them to a bowl. Take a fork and crumble your cornbread into the same bowl to make the cornbread stuffing. Set aside.
  3. On a cookie sheet, lay out the ham and cheese slices. Spoon about 1/3 cup of the cornbread stuffing into the center of each ham slice. Lay a slice of cheese on top of the stuffing. Roll up the ham and secure each one with a toothpick.
  4. Bake the ham roll-ups for 45 minutes. While they are cooking, prepare the apricot sauce.
  5. In a saucepan, mix the water, pineapple juice, brown sugar, and cornstarch. Stir until mixed then add the butter and apricot preserves.
  6. Take the ham roll ups out of the oven and serve them with the apricot sauce.
