  • 3 ½ cups currants
  • 1 ¼ cup sultanas
  • 1 ¼ cup raisins
  • ½ cup glacé cherries, chopped
  • ½ cup candied peel, chopped
  • ½ cup brandy
  • 1 ½ plain flour
  • ½ tsp salt
  • ¼ tsp nutmeg, freshly grated
  • ½ tsp allspice
  • 1 ½ cup brown sugar
  • 4 eggs
  • 1 tsp black treacle
  • 1 ½ cup butter
  • ½ cup almonds, chopped
  • zest of lemon and orange
  • 1 cup blanched almonds, whole



In a bowl, add currants, sultanas, raisins, glacé cherries, candied peel and soak them in brandy. Cover the bowl and place it in a dry place for at least 12 hours.


In a mixing bowl, add flour, allspice and salt.


Add the eggs, sugar, treacle and beat it with an electric beater.


Add butter and mix until everything combines well.


Add soaked fruits, lemon and orange zest and mix using a spatula.


Pour the mixture in a greased cake mould.


Place the tray in a preheated oven at 140 degrees C for 4 hours.


Once the cake is done, take it out of the oven.


Once the cake is cool, dip cocktail sticks in the cake and feed it with brandy. Cover it with parchment paper and leave it overnight.


Garnish the cake with blanched almonds.
