Cowboy Caviar

My family enjoys Cowboy Caviar, barbequing and we especially love “chips and dip.” Whenever I visit my grandmother in California, we like to picnic at the beach and bring this tasty dip along! It’s also a perfect recipe for the great grandchildren because they like to help out in the kitchen, and this recipe is safe (no stove) and easy to make.

Ingredients

  • 2 tablespoons of red wine vinegar
  • 1 ½ teaspoons of salad oil
  • 1 garlic clove, minced
  • 1 ½ teaspoons of hot sauce
  • 1/8 teaspoon of black pepper
  • 1 can of corn
  • 1 can of black-eyed peas
  • ½ cup of red onion
  • 1 avocado
  • 2/3 cup of cilantro (I usually nix this ingredient)
  • ½ pound of Roma tomatoes
  • A pinch of salt to taste

Directions

  1. In a large bowl mix the vinegar, salad oil, minced garlic, hot sauce, and pepper.
  2. Cut the avocado up into ½ inch cubes and add to the bowl.
  3. Drain your corn and black-eyed peas. Add corn, peas, red onion, cilantro, and tomatoes to bowl. Stir all the ingredients together.
  4. Grab some tortilla chips, and dig in!
